We live in a truly bountiful area. I am reminded by our out-of-state visitors, who look at the farmers markets and well-stocked stores in awe. Nowhere else but our Bay Area is so blessed with a plethora of wholesome, small farm-grown goodies for such a long growing season. You name it, we’ve got it. Tomatoes, peppers, squash, berries, stone fruit, figs (very expensive right now, second crop starting to come in), lettuces, beans and the list goes on. Take advantage, folks—here’s the link to the list of local farmers markets, in case you don’t know which one is convenient for you!

Classes

I’ve been asked to do a singles class, so here’s one you really MUST come to! Register right away, to insure a spot.

Hmm, can you make a meal, cooking with one arm tied behind your back? Only if you have a partner to help! Enjoy a fast-paced cooperative cooking event, with a three-minute circuit. Time’s up? Move on! Will we get dinner? I hope so! We’ve kept the menu simple but delicious, with plenty of interesting “two handed” tasks! Everyone will get to work on each dish, too—at least a part of it!

Menu

  • Gingery carrot soup, pesto crouton
  • Quick-cooked chicken paillard, Sungold cherry tomato vinaigrette and arugula
  • Blueberry tart with buttermilk honey sorbet

Rosetta Costantino’s Classes

We treasure having Rosetta teach in the kitchen, and if you’ve not yet come to one of her classes, you really should. Check out her wonderful website. Exploring it is almost like taking a trip to Calabria on a sunny day. You’ll find her garden blog—an inspiration to anyone wanting to grow your own here in the Bay Area, and a garden that has been featured in many newspaper and magazine articles. You’ll find some of her recipes (her cookbook comes out in 2010), descriptions of the many classes she teaches at the Paulding & Company kitchen, and an amazing travel opportunity, to experience her home area of Calabria with Rosetta as your guide. There’s even still a few spots available in this Friday’s class—if you like eggplant, you’ll love learning to use it in every dish in a meal, from appetizer to dessert.

Knife Sharpening

Our wonderful knife expert, Eric E. Weiss, brings back his popular Knife Sharpening class on Monday September 21st. Learn to sharpen your own knives, and more! We feature this class four times a year, and have many happy students who know the value of keeping their knives sharpened, to make cooking a breeze.

Summer Camp

Wow, what a summer! Four camps, each one with a personality of it’s own and a great group of kids. The first year ever, and a smash success. This is the final week of the final camp—but stay tuned for feature mini-camps, family days (you can’t believe how many parents wanted to come to camp!), etc. throughout the school year. I’ve asked Tracy Paulding, camp director and number one daughter, to talk about it here, but she’s just too busy running the camp. You’ll have to wait for a wrap-up next month in the newsletter. In the meantime, you can see photos from sessions one through three on the camp’s own website, cookprograms.com. Check out the Recipe of the Month, which is one of our campers’ favorite breakfasts.

The Rest of the Story

We’re launching into the autumn soon, and it’s time to start planning those events you’ve had in mind. Ready to take the team into the kitchen for a few hours of dynamic fun? We have new challenges and delicious menus to tempt you. Want to get a group of friends together to cook a friendly meal? We can do that too. Celebrate your birthday in the kitchen. Cook for yourselves with our guidance, or have us cater it! Have a party coming up that needs a caterer? Think of us! Planning a holiday party? NOW is the time to reserve your caterer!
