Welcome to my new website! I hope you all like it. I will add a new newsletter every month, approximately, with a corresponding recipe-of-the-month. The Calendar will be updated regularly, to reflect the many classes we will be having. So, come back frequently and see what’s new!
What’s new right now:
Fall Basic Cooking classes resume Tuesday, September 13th, with a new six-week session. As always, we will focus on building your skills and repertoire of recipes, with great, fresh seasonal meals. The class runs from 6:30 to 9:45 every Tuesday, for six weeks. The beginning of registration at Piedmont Adult School is August 29th—but they have the listing up now as a PDF file, so you can see all their classes and make your decisions in advance. Charlie Vollmar a well-known local food professional and very popular teacher, is bringing his Knife Skills class to the kitchen on October first. The Saturday workshop, from 10-2, ($75) will concentrate on teaching you the proper methods of cutting a variety of foods into a variety of shapes. He’ll feed students a light lunch, but this is not a cooking session, but rather a way to simply concentrate on learning knife skills. Many of you have requested this class, and hopefully you will sign up for it. It’s offered privately, so you only need to email me to sign up. Hopefully I will have a Paypal button up soon, so you can also pay for this class and others, directly. See the details on the calendar pages.
Thanksgiving Dress Rehearsal, one of my most popular every year, is scheduled for November 5th. This Saturday workshop will be a hands-on introduction to making a wonderful Thanksgiving dinner. The class will run from 10 AM to 2:30 PM. The group will make a full menu, from harvest salad with fall fruits, nuts and farmstead cheese, served with gougères (cheese puffs), to organic turkey with natural gravy, chestnut bread stuffing, yam casserole, Brussels sprouts with hazelnuts, and two different pies—apple and pecan. The cost for this class is $90 per person. As with the class above, I will take reservations by email to terry@pauldingandco.com, and hope to have a Paypal button set-up soon, so you an pay for the class online.
Rosetta Costantino, who teaches wonderful Southern Italian cooking classes at the kitchen, will have her new website up rather soon (check the Links page, I’ll put one up as soon as the site is live). I’ve seen the preview, and it’s a wonderful feast for the eyes with pictures of the beautiful food and produce Rosetta brings to her classes, and some recipes, too. You will be able to purchase classes with Paypal from her site, and I highly recommend her classes—which sell out in a matter of hours after they are announced. You can check my calendar for her classes, as well.
The Mom’s group class that I teach the first Thursday of every second month (6:30-9:45 PM) has openings—this class was formed by a mom, who grew up in Holland where her mother attended a similar class all through her childhood. At class, her mother learned new dishes, and brought them home to feed the family. So, this young mom wanted to carry on this tradition, with her friends and their friends. The next class on September 5th, will feature an Indonesian menu. The cost is a low $60 per class, and if you’re interested, just email to Terry@pauldingandco.com, and I’ll pass on the email to Denise, the current organizer.
Although postponed temporarily, we will have singles night cooking classes soon at the kitchen, through Serendipity-SF.com, with chef Francisco Machado, a good friend of mine and a knowledgeable chef and teacher. I’ll put the new dates on the calendar as soon as they are confirmed.
Team building sessions at the kitchen have continued to grow in popularity. By the end of August, I will have hosted nine groups this summer. The enthusiasm of the groups has been wonderful, and I hope some of you will think of Paulding & Company for your work group’s next outing or team development session. We’re currently working with several groups planning kitchen parties, as well, for birthdays and wedding rehearsals.
Finally, Paulding & Company has been busy with lots of catering—we will have catered half a dozen weddings between the end of May and the end of August, along with other catering including meeting luncheons and private parties.
