Risotto - Southern Italy style with Rosetta Costantino

Many of my students have asked for a
class about making risotto. Even though
risotto is not a traditional Southern dish,
it has become a national dish made
everywhere in Italy. I selected some of my
favorite risotto dishes that you will find in
Southern Italy.
You will learn about the different types of
rice used in Italy to make risotto and the
proper cooking technique. We will start
with a basic saffron risotto that will be
used to make Arancini ("little oranges")
as they do in Palermo, Sicily. Next, we
will showcase a risotto all on its own - a
simple, but delicious preparation with
fava beans, picked fresh from my
garden. Then we will get more
adventurous, making a "timballo" found in
Calabria and Sicily, of tomato risotto that
is layered with eggplant and mozzarella,
then baked until golden. We will finish
with a delicious dessert made with Italian
rice.
