Knife Skills with Charlie Vollmar

Students will learn proper knife handling and cutting techniques with well-known chef Charles Vollmar. Emphasizing efficiency and safety, Charlesí well-regarded classes teach professional knife techniques and skills to prepare the base for most recipes, making meal preparation less time consuming and more enjoyable.

In this intensive 3 hour workshop, participants will learn proper knife handling, emphasizing efficiency and safety, making meal preparation less time consuming and more enjoyable. Students will learn proper knife selection, handling, and care, and learn professional techniques and skills to efficiently prepare core products used as a base for most recipes. Following short demonstrations, students will practice peeling, dicing, slicing, mincing, chopping and julienne techniques on a variety of core products. The remainder of the class students will practice additional techniques including leeks, mushrooms, peppers, chile peppers, ginger, citrus, melons, tropical fruits and learn to peel, seed, filet and concasser a tomato.

Students are asked to bring a SHARP paring knife and Chef?s knife.
