The Paulding & Company Kitchen
Built in 2003-04, the Paulding & Company Kitchen is unique. It is spacious, light and well equipped, set up for both our professional catering and for hands-on cooking events and classes. Amenities include a walk-in refrigerator and freezer, a 12-burner commercial stove, 90,000 BTU stockpot stove, 4 full-size commercial convection ovens, 90-second low-temperature commercial dishwasher, full-size 3-compartment sink, prep sink, roomy work table space for our guests to prep and cook together, and a seating area where large and small groups can enjoy the wonderful foods they prepare.
Besides our regularly scheduled classes and catering, the kitchen is available for private group classes and parties, hands-on culinary team development sessions, and catered meetings and events.
Terry Paulding, Paulding & Company founder, began working in the restaurant industry as a teen. Starting out as assistant to chef Alice Brock of Alice’s Restaurant in Stockbridge, Massachusetts — the restaurant featured in the Arthur Penn movie of that name — she remained in the business for many years. Terry retired from active kitchen duty and turned to teaching as she raised her family, and in 1993, returned to school at the California Culinary Academy. Combining teaching and catering allows Terry to share her love of good food and her creativity in the kitchen with her students, her corporate team building clients, and her many catering clients.
